Sweet Potato Toast is the perfect gluten-free alternative to bread, easy to make and tastes absolutely delicious!
Over the summer, I spent time with family on Cape Cod, and my sister revealed this amazing dish to me. She has been gluten-free since having my nephew, so if there are any new moms out there breast feeding and navigating through potential child allergies, this is a great option. Not only do sweet potatoes function as the perfect vehicle for your favorite foods/toppings, they also have amazing health benefits.
Health Benefits of Sweet Potatoes
In the case of sweet potato toast, these are a great substitute for bread since sweet potatoes are gluten-free. They are also high in fiber and have antioxidants that promote gut health. Just like carrots, sweet potatoes are rich in beta-carotene, which provides benefits for one’s vision.
Important Tips!
I need to preface this by saying, this is one of the easiest things you can make and perfect for someone who does not cook often or is new to cooking for themselves. There are very few steps and one main ingredient. At the same time, you can get creative without worrying that you will mess it up.
How to cut your sweet potatoes
- Cut the top and bottom first – this allows a sturdy foundation for you to safely slice the sweet potato lengthwise (or the long way)
- Hold the sweet potato with one hand and cut into 1/2 inch slices
- One of the keys to making good sweet potato toast is ensuring you do not cut the sweet potato too thin
- Do not peel your sweet potatoes for this purpose
- Peeling will make the sweet potato less sturdy and may not allow for a sturdy foundation for your topping
- Eating the skin of a sweet potato is perfectly safe, and it is actually the part of the sweet potato that carries the most nutrients
Difference between Sweet Potatoes and Yams
- Sweet potatoes are
- a starchy root vegetable
- long and tapered, with a smooth skin (can range in color: yellow, orange, red, brown, purple or beige)
- regardless of type, tend to have a sweeter flavor than other potatoes
- Yams tend to be
- larger than sweet potatoes and have a more brown colored skin
- less sweet and more dry & starchy
Unfortunately, some grocery stores use these names interchangeably even though they are different foods. If you are unsure what you are looking at in the store, do not hesitate to ask someone. It is worth the effort!
Sweet Potato Toast Toppings
- Peanut Butter or any Nut Butter substitute (add sliced Banana)
- Avocado Spread with Red Pepper Flakes
- Fried Egg (add Frank’s RedHot Sauce for a kick!)
- Extra Virgin Olive Oil & Trader Joes’ Everything But the Bagel Seasoning
- Cinnamon & Sugar

Sweet Potato Toast
Equipment
- Baking Sheet Pan
- Tin Foil
- Slicing Knife
- Basting Brush (optional)
Ingredients
- 1 tsp Olive Oil
- 3 large Sweet Potatoes
- 1/4 tsp Salt
- 1/2 cup Peanut Butter
Instructions
- Preheat Oven to 400F
- Put a sheet of tin foil on sheet pan
- Cut tops and bottoms of each sweet potato
- Slice Sweet Potatoes lengthwise, in 1/2 inch thick slices
- Lay Sweet Potato slices in one even layer on the sheet pan
- Drizzle or use basting brush to lightly brush Olive Oil onto each slice
- Sprinkle salt
- Bake for 30 mins
- Let cool and spread peanut butter on each slice
- If you are not eating it all right away, you can easily store remaining slices in a Tupperware container to enjoy later!
