Equipment

  • Baking Sheet Pan
  • Tin Foil
  • Slicing Knife
  • Basting Brush (optional)

Ingredients

  • 1 tsp Olive Oil
  • 3 large Sweet Potatoes
  • 1/4 tsp Salt
  • 1/2 cup Peanut Butter

Instructions

  • Preheat Oven to 400F
  • Put a sheet of tin foil on sheet pan
  • Cut tops and bottoms of each sweet potato
  • Slice Sweet Potatoes lengthwise, in 1/2 inch thick slices
  • Lay Sweet Potato slices in one even layer on the sheet pan
  • Drizzle or use basting brush to lightly brush Olive Oil onto each slice
  • Sprinkle salt
  • Bake for 30 mins
  • Let cool and spread peanut butter on each slice
  • If you are not eating it all right away, you can easily store remaining slices in a Tupperware container to enjoy later!
