I love sweet potatoes, and it does not take much to make them into a meal. My Cheesy Sweet Potatoes with broccoli and avocado makes for an easy lunch or dinner. If you are looking for a healthy and vegetarian meal this one is for you!

Health Notes for this recipe

  • If you are a vegetarian or limiting meat in your diet, you know the importance of including foods that are high in protein. Sweet potatoes and broccoli are among a number of vegetables that have the most protein, so this meal combo will definitely meet your needs.
  • In order to get the most nutrition out of this meal, be sure to keep the skin on your sweet potatoes
    • The skin is safe to eat and contains the most nutrients
  • While this recipe calls for baking the sweet potatoes, boiling the potatoes actually allows the nutrients to be more easily absorbed into the body

  • 4 Sweet Potatoes
  • 10 oz. bag of Broccoli Florets – fresh or frozen (Used Nature’s Promise Organic)
  • Garlic
  • 2 Avocados
  • Shredded Cheddar Cheese (Used Sargento)
  • Olive Oil
  • Sea Salt

This recipe is so easy to make, nutritious and flavorful. It is also surprisingly filling! This is something you can make quickly during the week for you and your family. You can also simply make the sweet potatoes as a nice side dish for any meal.

Cheesy Sweet Potatoes

Equipment

  • Baking Sheet Pan
  • Tin Foil
  • Knife
  • Sauté Pan

Ingredients

  • 4 Sweet Potatoes
  • 10 oz. bag Broccoli Florets Used Nature's Promise Organic
  • 2 Garlic Cloves
  • 2 Avocados
  • 1 cup Shredded Cheddar Cheese Used Sargento
  • 3 tbsp. Olive Oil 2 tbsp. for broccoli, 1 tbsp. for sweet potatoes
  • Sea Salt to taste

Instructions

  • Preheat oven to 450F
  • Line baking sheet with tin foil
  • Wash and Dry Sweet Potatoes and Broccoli
  • Dice Garlic
  • Cut each Avocado in half, remove pit, make 1/4 inch slices and use spoon to remove avocado "meat" once ready to plate
  • Lay Sweet Potatoes on baking sheet; Make 3-4 diagonal slices down each sweet potato and drizzle with 1 tbsp. of olive oil (use extra virgin) and season with sea salt
  • Bake Sweet Potatoes for 40-50 minutes depending on their size; test readiness with a fork, which should easily slide into the potato when ready
  • While potatoes are baking, heat 2 tbsps. of olive oil in sauté pan on medium heat
  • Add Garlic and Broccoli florets in an even layer in the pan; cook for 2-3 minutes without stirring until lightly browned
  • Once browned add 1/4 cup of water to the pan and sauté, stirring occasionally until water is gone
  • Put Sweet Potato, Broccoli and half of an Avocado on a plate; Cut Sweet Potato in half and sprinkle with Shredded Cheddar Cheese

Notes

Other options for how to cook broccoli:
  • Frozen Broccoli (Nature’s Promise Organic)
    • This option is a lot easier, as you can simply cook in the microwave
    • However, it will be less flavorful than sautéing with garlic and olive oil
  • Baking Fresh Broccoli
    • This option would require another baking sheet and can cook in the oven at the same time as the sweet potatoes
