Looking for a go-to weekday meal that is healthy and delicious? This Pan Seared Halibut with roasted potatoes and green beans is the one!

This dish is is surprisingly easy to make with very few steps and simple ingredients. On the other hand, it can totally be something you make to impress that special person in your life because it looks like it takes a lot of time and effort. It is incredible what a good sear can do to the presentation of your dish.

Pro Tips!

Halibut has really thick skin! When you buy halibut, make sure to ask that the skin be taken off for you. It is a doozy to try to do it yourself – trust me. And we don’t need to make more work for ourselves, especially during the week when we are balancing so many other things. A great meal can be easy and straightforward to make, just like this one.

How do you know when the halibut is fully cooked?

  • You want to look for an opaque color, meaning it is no longer shiny or translucent. It does not take a long time to cook halibut using the pan seared method in this recipe, 3-5 minutes each side.
  • When you cut into the halibut with a fork, it should flake off easily.

Want to make sure you get a nice sear on the fish?

  • Season Well!
  • Once the fish is in the pan, do not move it around – let the pan, oil and spices do its work

How to season your Halibut

Halibut has a light and delicate flavor on its own, so it can handle adding different spices or toppings. This recipe calls for basic spices of salt, pepper and paprika. The paprika is a great spice to use because it does not have too strong of a flavor, and when you pan sear, the paprika results in browning on the fish that is just gorgeous.

You can use this recipe as a base and then add other things to spruce it up. Some ideas include roasted cherry tomatoes or even a homemade salsa or Pico de Gallo for a cool, refreshing element.

I added my Fresh Basil Pesto to it the other day, and it took the dish to a whole other level! It was SO tasty, and the halibut handled the pesto flavor perfectly.

Shopping List for Pan Seared Halibut Meal

  • 1 lb. Halibut
  • 12 oz. bag of Green Beans 
  • 24 oz. bag of Baby Potatoes (yellow, red or medley)
  • Olive Oil
  • Salt, Pepper, & Paprika

Equipment

  • Baking Sheet Pans
  • Frying pan
  • Tin Foil
  • Slicing Knife
  • Cutting Board

Ingredients

  • 1 lb. Halibut
  • 12 oz. Green Beans bag
  • 24 oz. Baby Potatoes bag of yellow, red or medley
  • 4 tbsp. Olive Oil
  • 3 tsp. Salt approximate
  • 2 tsp. Pepper approximate
  • 1 tsp. Paprika approximate

Instructions

  • Preheat Oven to 400F
  • Wash and Dry Potatoes and Green Beans
  • Line two baking sheets with tin foil (or parchment paper)
  • Lay Potatoes and Green Beans evenly on the pans
  • Drizzle with olive oil, season with salt & pepper and toss to combine
  • Put in oven for 40-45 minutes – Alternate pans to opposite rack and toss halfway through
  • While potatoes and green beans are roasting, prep Halibut
  • Pat Halibut dry with a paper towel
  • Cut in half and season both sides of Halibut with Salt, Pepper & Paprika
  • Put two tablespoons of Olive Oil into frying pan, warm on Medium heat
  • Lay Halibut delicately into pan and leave for 4 mins, without moving (this will allow you to get a nice sear on the filet)
  • Using a spatula, check to see if the bottom side of the filet is seared/browned
  • Flip Halibut over to sear the other side for another 4-5 minutes until fish is cooked through (should have an opaque color)
  • Plate and Enjoy!
