Strawberry Blueberry Rhubarb Crisp

Strawberry season is one of my favorites-let’s make something delicious together! It is always a stark reminder of how much more flavorful strawberries are when they are freshly picked and farm or home grown. The insides are a beautiful, vibrant red color, and the flavor is unmatched by any strawberries you get year round in the grocery store. Whether you have a lot of strawberries from going on a pick-your-own adventure or you have strawberries a bit past their prime that you don’t want to waste, making a crisp is a great way to make something delicious with them. With its sweet and tart flavor, Strawberry Blueberry Rhubarb Crisp will quickly become your go-to recipe.

What is Rhubarb?

Rhubarb is a vegetable in the buckwheat family. They are long stalks with a similar shape and texture to celery. Although, they have a much different flavor and coloring, with a pink or redish shade. Important to note is that the rhubarb leaves are toxic and should not be eaten.

Rhubarb has a very tart flavor, which makes it a perfect pairing for sweet strawberries. The flavors really balance each other out.

Why add Blueberries?

Strawberry and rhubarb are a very common combination, and you can definitely make a crisp with just those two items. You can do any combination of strawberries, blueberries and rhubarb together, and there is no doubt it would taste delicious. The addition of blueberries seems to balance the flavors even more to be less sweet, which I prefer.

Recently, I enjoyed an incredible blueberry and rhubarb crisp at Midnight Morning, and they used a polenta topping instead of oats. I definitely want to make that version sometime. Equipment

  • 1 Slicing Knife
  • 1 Square Baking Dish Used 8X8
  • 2 Wooden or rubber spoons one to stir dry mixture & butter and one to mix sugar with strawberries, blueberries & rhubarb
  • 1 small microwavable bowl to melt butter

Ingredients

  • 1 cup Strawberries diced
  • 1 cup Rhubarb diced
  • 1 cup Blueberries
  • 1/3 cup Sugar
  • 2/3 cup Rolled Oats
  • 2/3 cup Flour
  • 1/3 cup Brown Sugar
  • 4 tbsp Butter melted
  • 1/4 tsp salt

Instructions

  • Preheat oven to 350 degrees F
  • Small dice the Strawberries and Rhubarb to measure at 1 cup each
  • Add to baking dish
  • Measure 1 cup of Blueberries and add to baking dish
  • Add Sugar and stir to combine
  • Put butter in microwavable bowl and heat up at 15 second increments until melted
  • It usually takes 2-3 times for it to melt fully
  • In separate bowl, mix Oats, Flour, Brown Sugar, Salt and Melted Butter
  • Evenly pour and spread over the top of Strawberry, Blueberry & Rhubarb mixture
  • Add to oven and bake for 45-50 minutes
  • There is no need to cover with tin foil, as you want the top to brown a bit.
  • Remove from oven and let cool for 10 minutes
  • You will know it is ready when top is slightly brown and fruit is bubbling
