- 2 tbsp Olive Oil
- 1/2 Vidalia Onion
- 3 cloves Garlic
- 1 can Black Beans
- 1 Bell Pepper Red, Orange or Yellow
- 1 bag Tortilla Chips
- 4 handfuls Mexican Shredded Cheese
- 1 Avocado cut into small dices
- 8 Grape Tomatoes sliced into fours
- 1/4 cup Queso Dip Used Tostitos Salsa con Queso
- 1/4 cup Salsa Used Tostitos Medium Spice
Preheat Oven to 375F
Add Olive Oil to small pot on Medium Heat
Small dice Vidalia Onion, chop Garlic and add to the pot
Drain and Rinse Black Beans and Small dice the Pepper
Sautee Onions and Garlic until onions are translucent
Add Black Beans and Pepper, Sautee for 5 minutes
Put one layer of Tortilla Chips on the sheet pan
Add a layer of Black Beans, Onions, Pepper mix and handful of Shredded Cheese
Alternate layers of chips, Black Beans, Onions, Pepper mix and Shredded Cheese 2-3 times
Bake in oven for 10 minutes
While baking, slice tomatoes into fours and cut avocado into small dices
Warm 1/4 cup of Tostitos Salsa con Queso in the microwave for 45 seconds
Once Nachos are warmed and shredded cheese is melted, remove from oven
Drizzle Salsa con Queso and Salsa to the warmed nachos
Add the final layer of fresh tomatoes and diced avocado
